Jon’s roulade puts mango and passion fruit into the same rolling challenge as Dan’s Florida version. The combination is bright, aromatic, and naturally suited to a dessert where fruit has to cut through sweet meringue and cream. The handshake records the finished tropical roulade; it does not give us licence to reconstruct its formula.
