Lore

Dan’s financiers were a two-flavour exercise in small-format precision: pistachio and matcha on one side, orange and peach on the other. A financier may be compact, but it has to deliver a browned-butter crumb, a clean mould release, and a finish that makes the flavour contrast legible. The semifinal handshake confirms that the pair worked as a composed collection.

Public recreation / fan method — not the baker’s original formula. Paraphrased from Pistachio Matcha Financiers with Pink Peppercorns, Relaxed Recipes; this is not Dan Hunter’s original formula.

Ingredients

  • 50g shelled pistachios
  • 50g ground almonds
  • 100g icing sugar
  • 40g plain flour
  • 5ml matcha powder
  • 4 large egg whites
  • 100g unsalted butter
  • A pinch of finely crushed pink peppercorns
  • Topping: 30ml yuzu marmalade; 20 yuzu gummy candies; 15g crushed pistachios

Method

  1. Heat the oven to 200°C. Grind the pistachios almost to powder and combine them with the ground almonds.
  2. Melt the butter and continue cooking until golden and nutty; set aside to cool slightly.
  3. Sift the icing sugar, flour, and matcha. Stir in the nut mixture and pink peppercorns.
  4. Lightly whisk the egg whites, fold them into the dry ingredients, then fold in the warm brown butter.
  5. Fill financier moulds two-thirds full. Bake 12–15 minutes until golden and springy.
  6. Cool in the moulds for 5 minutes, then transfer to a rack. Top with warm yuzu marmalade, a yuzu gummy, and crushed pistachios.

Baker’s tips

Let the browned butter cool until warm rather than hot before folding it in, and grease the moulds well so the small cakes release cleanly.
